when we create an Adapter Notification will create a publishable document type. can we treat it as a canonical document?

Canonicals are standardized representation. It would be depend on how much can you reuse this document (across multiple vendors). It is not advisable to treat a document coming out of adapter service as canonical document (of course it will change on company to company coding standards).
It can be treated as an intermediate document rather than canonical.
