In Deployer → Projects → → Define, I could see server included as part of the Deployer project even though it is NOT selected as a server to be deployed to. Can someone suggest what could be the issue.

the Server under Deployer → Projects → Define is the source server (esp. for Runtime-based Deployments) where the packages are retrieved from before or during the build of the project.
The target server will be defined in the Map-Tab, where it is also possible to do some variable substitution to equip the objects on the target with the correct values instead of the original source server values.
