Can anyone point me to documentation or examples on transforming XML files to IDOCs?
The SAP Adapter for the Integration Server has some examples of this within the demo folder of the package-
The documentation that I have received with SAP Business Connector does not include instructions on running the demo in the SAP package.

The SAPBCSapAdapterGuide.pdf doc should have the information you need on the SAP API. Check Appendix D in that manual.
