The docker image is a cloud solution of API Gateway, but I think the question was about the on-premise one.

That’s not correct.
The containers offered contain the on premise version in a container which you can/need to run in your own container environment.
The cloud solution is offered as a platform and is only available as a Service without any download.

So the the images Toni mentioned can give you a good impression of the on premise variant without the need to do the complete installation process yourself.
