Set false "allow unspecified fields" in a document type.

If you have a document into a document type, you can set false “allow unspecified fields” for this into document. But this option is not available for the document type.

Is not posible do this?

If you create a document with this document type. You can put more fields into the document. And I want to do not permit this.
