If I need to debug a flowservice that takes a huge amount of input data fields, what are my options? I can call the service from an external API, but then I won’t be able to step-by-step its flow and see where it goes wrong. To debug it, I’d have to manually type a lot data before it can be “saved as a value set”. Is there a reason this form does not just have a “Load XML/LoadJSON” button?

Unfortunately loading input fields is not supported in cloud for debug operations.
For now you have to manually enter the values.
